Open-faced smashed chickpea salad sandwich

Ingredients

Canned chickpeas 15 1⁄2 oz, rinsed and drained

1⁄3 cup Plain fat free Greek yogurt

3 Tbsp Unsweetened dill

pickle, finely chopped

1⁄2 tsp Lemon pepper

1⁄4 tsp Kosher salt

4 slices Light whole grain bread, toasted

1 1⁄2 cups Baby spinach

4 slices Tomato

1⁄2Avocado, thinly sliced

Directions

Place the chickpeas in a medium bowl; mash with a fork to desired consistency. Stir in the yogurt, pickle, lemon pepper seasoning, and salt.

Place 2 toast slices on each of 2 plates. Top evenly with spinach, tomato, avocado, and chickpea mixture.

Serving size: 2 topped toasts
